
We are the Italian fresh pasta factory to have the UNI 11020 certificate (System which draws out the origins of the raw materials in the agro industrial firms) given by CSQA. CSQA n° 2990 certificate.
The finished product is marked with a BAR CODE BATCH.
Two are the positive points :
1) We can TRACE BACK the origins of the raw materials and the product we have sold in all our selling points, by means of the bar code batch.
2) We can provide THE ORIGINS OF ALL THE RAW MATERIALS of our products to our consumers.
WE HAVE ATTAINED THE AGRO INDUSTRIAL CERTIFICATE 11020 FOR THE PROCESS WHICH TRACES BACK THE ORIGINS OF ALL OUR PRODUCTS BY THE CSQA ASSOCIATION.
● WHEAT FLOUR which has a low percentage of ashes (the fresh pasta becomes less grey in colour).
● SUPERFINE DURUM WHEAT FLOUR which has a low percentage of ashes.
● MAIZE FLOUR "ottofile" (eight lines), autochthonal and GMO free type of flour, controlled during growth in the Monregalese area.
● MAIZE FLOUR "ottofile" (eight lines) ground in a stone mill in Mondovì.
● RICE FLOUR heat-treated on a low bacterial charge.
● Fresh EGGS standard or biological for the maize biscuits .
● BEEF MEAT Piedmontese cattle breed, with the CO.AL.VI. certificate (we are the licensee of the CO.AL.VI. trade mark and we are the official suppliers to all butchers which have the CO.AL.VI. trade mark for fresh pasta).
● PORK MEAT selected in the Cuneo province, guaranteed and genetically registered (by means of the DNA) by the CON.SA.TI. (Consorzio Salumi Tipici Cuneesi, Association of the typical local salami and pork meats).
● PARMA HAM (26% of the "tortellini" filling) of the Parma Consortium.
● BORAGE controlled during the growth in Mondovì.
● ROCKET controlled during the growth in Mondovì.
● grana padano CHEESE grated in our factory (we do not buy pre-grated cheese).
● BUTTER as well as the milk to produce it, come from a cheese factory in Mondovì .
● RICOTTA cheese of a cheese factory in Mondovì.
● CASTELMAGNO cheese P.D.O.
● RASCHERA cheese P.D.O., mountain pasture cheese "OCCELLI AGRINATURA".
● NATURAL TRUFFLE: we do not use chemical flavourings.
● NATURAL VANILLA: we do not use chemical flavourings.
● HAZELNUTS of the Piedmont region which have a P.G.I. certificate.
● WE DO NOT ADD MONOSODIUM GLUTAMATE (it is an allergene ingredient) in our natural products.
●● WE DO NOT USE PRESERVATIVES AND COLOURING AGENTS.
● WE DO NOT BUY SEMI-FINISHED INGREDIENTS, for we produce all the fillings of the fresh pasta, adding to the roast meats natural aromatic herbs, without adding any chemical flavourings.
● Our factory and our machineries are among the first in Italy to have the E.U. STAMP, according to the I 9-733 law.
● We sell our FRESHLY MADE products UNDER MODIFIED ATMOSPHERE packets, FROZEN or LOOSE, according to our customers preference.
